Very Low Fat White Chocolate Pavlova

what you need
  • 4 egg whites
  • 1/4 tsp. cream of tartar
  • 1 cup granulated sugar
  • 1 1/2 cups fat free milk
  • 1 pkg. (4 serving size) Jell-O White Chocolate Instant Pudding & Pie Filling
  • 1 cup thawed Fat Free Cool Whip Whipped Topping
  • 1/4 cup finely chopped White Chocolate Chips (topping of your choice)

Preheat oven to 225 degrees Farenheit. Beat egg whites and cream of tartar in medium bowl with electric mixer on high speed 5 minutes or until soft peaks form. Gradually add granulated sugar, 1 Tbsp. at a time, beating on high speed until stiff peaks form.

Spoon onto baking sheet covered with parchment paper. Using a large spoon, make a 10-inch circle of meringue. Indent slightly in the center of the circle to form a crust. Bake 1 1/2 hours. Cool.

Pour milk into large bowl. Add dry pudding mix. Beat with wire whisk 2 minutes or until well blended. Gently fold in whipped topping. Refrigerate.

Place cooled meringue on serving plate. Spoon pudding mixture onto meringue, leaving a border of meringue showing. Sprinkle chopped white chocolate chips over pudding.
My dad has recently been put on a No Fat / Low Fat diet and has really missed out on his sweet tooth. This twist on your Winter 2005 Creamy Vanilla Raspberry Pavlova has really shown him that you can still eat well without breaking the doctors rules!

I have recently experimented with new puddings (Butterscotch is very good) and have found that this is only limited by your imagination.

Rated  by megpickersgill on 3/30/2005 Great healthy recipe! I substitued splenda for the sugar and fat-free sugar-free pudding (diabetics in the family) and the result was delicious! No one could guess it was so low-cal!
