White Chili with Chicken!

what you need
  • 2 whole boneless skinless chicken breasts, cut into bite sized pieces
  • 2 Tbsp. olive oil
  • 1 medium onion, minced
  • 3 garlic cloves, minced
  • 1-½ cups chicken broth
  • 1 lb. tomatillos, husks and stems removed, finely chopped
  • 1/2 tsp. ground cumin
  • 1/2 tsp. ground coriander
  • 1/2 tsp. ground dried oregano
  • 1 can (4 oz.) green chili peppers, diced
  • 1 jar (42 oz.) great northern beans
  • 8 oz. Monterey jack cheese, shredded

In a frying pan, place the olive oil and chicken pieces. Sauté until cooked; place chicken in a large saucepan; set aside.

In the same frying pan, now place the onion and garlic. Sauté until tender (approx. 2 min.). Place in the saucepan with the chicken.

Add the broth, tomatillos, and dry seasonings. Bring to a boil then simmer for 20 minutes.

Add the chili peppers and beans – heat through.

Place shredded cheese on each individual serving.
Like any chili recipe, the longer you let it simmer with all ingredients, the better it gets!

Rated  by swartc on 10/20/2004 I actually didn't make this recipe from Kraft. I had my own recipe that I absolutely love. I don't give it out to often. When I seen that Kraft had this recipe I just had to let everyone know it is so good.
