Wolf-Bear's Salsa

what you need
  • 1/2 cup golden honey
  • 1/4 cup Tabasco sauce
  • 6 large tomatoes, diced
  • 4 yellow onions, diced
  • 12 banana peppers with seeds, diced
  • 4 jalapeño peppers, diced
  • 4 cloves fresh garlic, minced
  • Pinch of oregano

In measuring cup, add golden honey to 1/2 cup marker. Add 1/4 cup of Tabasco to honey, mix well. Set aside.

Dice tomatoes, onions, banana peppers, and jalapeño peppers. Put in large sealable bowl. Mince garlic, add to mix in bowl. Stir contents until thoroughly mixed together. Add pinch of oregano and Tabasco & honey mixture. Stir until everything blended well.

Cover mix with seal-tight lid and set in refrigerator until time of event. This salsa doesn't need to be cooked. Everything is fresh, and healthy. The honey acts as a preservative…
My suggestion is to make this salsa a couple of days before you are going to use it. This gives it a hearty taste and blends all the juices together.

You can adjust the temperature of the mix by the amount of honey/Tabasco used. More honey/less Tabasco, milder flavor; less honey/more Tabasco, hotter flavor.

Now here is the best part, and I have had numerous compliments on this: This salsa can be used as an appetizer with tortilla chips, or a garnish with any entree. The liquid left over afterwards can be used as a marinade for beef, pork, chicken, or turkey. Haven't tried it with fish, but may make for an awesome Cajun breaded cover if dipped in first, then fluffed with flour or cornmeal. You can also use the remaining juice as a topper for steak instead of steak sauces.

It is very healthy, and very tasty. Please enjoy at your next sporting event, or holiday party. It will definitely warm up the cold night.
