Yummy Chocolate Eclair

what you need
  • 2 small boxes French vanilla pudding
  • 4 cups white milk (whole milk makes a richer, creamer pudding but you can use skim if desired)
  • 1 tub (8 oz.) Cool Whip, thawed
  • 4 sleeves graham crackers
  • 1 tub already prepared chocolate frosting
make it
Prepare pudding as instructed on box then add thawed Cool Whip, mix well.

With the graham crackers cover the bottom of the 9x13 dish. Now layer pudding, and crackers with the last layer being crackers. Make sure you cover the entire top. You will have to break the crackers to fit your dish.

Top with chocolate frosting!
Notes
I like to make this dessert the night before I plan to serve it. This gives the crackers time to get soft. I also wait to frost it the next morning when the crackers have had time to get soft and set ...they won't move and makes the spreading much easier!
