Zippy Cheese Artichoke Oven Omelet

what you need
  • Butter
  • 3/4 cup salsa (hot or mild)
  • 1 cup artichoke hearts, chopped
  • 1/4 cup grated parmesan cheese
  • 1 cup (4 oz.) shredded Monterey jack cheese
  • 1 cup (4 oz.) shredded sharp cheddar cheese
  • 6 large eggs
  • 1 carton (8 oz.) sour cream
  • Seasonings
  • Tomato wedges
  • Parsley sprigs
make it
Preheat oven to 350°F. Butter a 10-inch quiche dish. Spread the salsa on the bottom. Distribute the chopped artichokes evenly over the salsa. Sprinkle with the cheeses.

Blend the eggs, add sour cream and seasonings. Pour the egg mixture over the cheese.

Bake uncovered for 30-40 minutes. Cut in wedges and serve with tomato wedges and parsley sprigs.

Rated  by riba33 on 4/13/2004 This is a keeper for breakfast guests. We love all the ingredients in this omelet and what we really like is the fact that we can reduce the fat with imitation eggs and low-fat sour cream. So glad I found this recipe.
