Zucchini Casserole

what you need
  • 2 lb. zucchini, peeled and cut into cubes
  • 1 large onion, diced
  • 16 oz. sour cream
  • 1 can cream of chicken soup
  • 2 cups shredded carrots
  • 2 sticks butter
  • 2 boxes Stovetop Stuffing
make it
In large saucepan, boil zucchini and onion for 2 minutes.

Mix sour cream, cream of chicken soup, and carrots. Drain zucchini & onion and add to mixture.

In separate bowl, melt butter. Add dry Stove Top out of the box. Mix with butter.

Place zucchini mixture in 9x13 pan and layer with Stove Top.

Bake at 350°F for 30-35 min or until golden brown.
