Zucchini-Chocolate Cake

Makes: 1 sheet cake Total Time: 1 hr 10 min

what you need
  • 3 cups flour
  • 1/2 Tbsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 cup cocoa powder
  • 4 eggs (5 if small)
  • 3 cups sugar
  • 1 tsp. vanilla extract
  • 1 1/2 cups oil
  • 3 cups grated raw zucchini
  • 2 cups nuts (optional)
make it
Mix flour, baking powder, baking soda, salt and cocoa powder and set aside. Beat eggs, sugar, vanilla extract and oil. Add zucchini and nuts. Next mix in dry ingredients.

Spread evenly in a greased and floured cake pan.

Bake @ 350 degrees for approx. 45 minutes.
Insert a toothpick and if it comes out clean it is done.
Notes
Frost with your favorite frosting. This is a very moist cake; it is good plain or with a scoop of ice cream too.

You can also make cupcakes out of these too; bake 25 minutes - depending on size.

Rated  by labmom5 on 9/7/2011 We LOVED this "cake". It is more like a brownie. My picky eater wasn't going to try it because it had zucchini in it. He did and he had 2 pieces!! He was amazed that he couldn't even tell there was any zucchini!!!
