Zucchini Crumb Pie

what you need
  • Crust:
  • 3 cups flour
  • 1 cup sugar
  • 1 cup margarine
  • 1/2 tsp. salt
  • Filling:
  • 6-8 cups peeled, cored and sliced zucchini (about 1/4 inch thick)
  • 2/3 cup lemon juice
  • 1 cup sugar
  • 1/4 tsp. nutmeg
  • 1/2 tsp. cinnamon
make it
Crust:
Mix all ingredients together until crumbly. Pat 1/2 of the crumb mixture into a 13x9 inch pan. Bake at 350°F for 10 minutes.

Filling:
Simmer zucchini in lemon juice until tender. Add sugar, nutmeg and cinnamon. Simmer 5 minutes, then add 1/2 cup crumb mixture to thicken filling. Set aside.

Pour filling into pre-baked crust. Top with remaining crumb mixture (top should look crumbly). Bake at 350°F for 30-40 minutes.
Notes
This recipe came from my cookbook from the school. Kelly submitted the recipe. It tastes just like apple pie. Even my son, who hates zucchini, loves it!
