what you need
- 2 med. zucchini
- 1 large ham steak (about 1-2 pounds)
- 1-2 onions
- 2 pkg. (8 oz. each) Kraft Sharp Shredded Cheddar Cheese (you can add more if you like it cheesy)
make it
Clean, seed and slice zucchini. Place in sauce pan and cover with water. Boil in sauce pan till just tender, don't overcook, will be cooked more in the oven.
In the meantime, dice the ham steak and onion and fry up in pan till the onions are translucent. Drain zucchini, pat dry.
Grease 9x13 casserole pan. Layer 1/3 of zucchini, ham & onion mixture, then top with cheese. Repeat till all ingredients are gone topping it off with cheese.
Cook in an oven at 350°F for about 30 min. till cheese is bubbly and golden brown.
Notes
If you don't pat the zucchini dry, the casserole can get watery, but it’s still a hit.
I have made this for family reunions and pot luck dinners, people always ask for the recipe.
