what you need
- 1 cup pancake mix
- 1/4 cup water
- 1/4 cup zucchini
- 3 Tablespoons sugar
- 2 Teaspoons cinnamon
make it
Mix pancake batter with water.
Stir in shredded (peeled & seeded) zucchini, sugar, and cinnamon.
Cook on hot griddle or fry pan until golden brown on both sides, as if making plain pancakes.
Notes
If using frozen zucchini, drain well before mixing.
We like them without any syrup or topping. They are even tasty when cold. My granddaughter takes them to school for her snack.
