Zucchini Squares - Dessert (Like Apple Crumble)

what you need
  • Filling Ingredients:
  • 2 qt. zucchini, peeled and sliced
  • 2/3 cup lemon juice
  • 1 cup sugar
  • 1/2 tsp. cinnamon
  • 1/8 tsp. nutmeg
  • Pastry and topping Ingredients:
  • 4 cups flour
  • 1/2 tsp. salt
  • 2 cups sugar
  • 1 cup butter
  • 1 tsp. cinnamon (for topping)
make it
Peel and slice open zucchini. Remove seeds with spoon. Slice into apple-like slices. Cook zucchini and lemon juice in large pan over medium heat until tender. Add sugar, cinnamon and nutmeg; simmer over low heat.

Make pastry: Mix together all of pastry ingredients, cutting butter into dry ingredients. Pastry will be dry/crumbly.

Reserve 1 cup of this mixture for topping - add 1 tsp. cinnamon to this topping mix. Reserve another 1/2 cup of the pastry mix. Add this 1/2 cup to zucchini to thicken filling. Place remaining pastry onto a greased cookie pan, pressing mixture along the bottom and sides of pan to create bottom crust.

Bake 10 min at 375 degrees. Remove pan from oven, spread zucchini mix over crust. Sprinkle topping and bake for 30 minutes at 350 degrees, or until brown.
Notes
This recipe tastes like apple crumble, as the zucchini takes on the flavor of lemon juice, sugars and cinnamon.
It sounds like a lot of steps, but actually pulls together quickly.
My kids loved it (they 'hate' zucchini, but loved this recipe!). You'll be delightfully surprised, and it's another great recipe for this summer squash!

Rated  by a cook on 9/6/2010 It seems to be too sugary - using 3 cups in the recipe is a bit too much - might make it again but cut down on some of the sugar. Otherwise not bad.
