Zucchini Sweet Relish

what you need
  • 24 cups grated zucchini (about 6 large zucchini)
  • 8 cups onion
  • 10 Tbsp. salt
  • 2 1/2 cups vinegar
  • 6 cups sugar
  • 1 Tbsp. dry mustard
  • 1 1/2 tsp. celery seed
  • 3/4 tsp. nutmeg
  • 1 Tbsp. cornstarch
  • 1/2 tsp. pepper
  • 3/4 tsp. turmeric
  • 4 red or green peppers
make it
Mix zucchini, onion and salt; let stand overnight. Rinse and drain in morning.

In kettle, boil all ingredients then add green or red peppers. Cook again to boil.

Pack hot and process 35 minutes in canner.
Excellent sweet relish for hot dogs, sausage, hamburgers, etc.

You can use overgrown zucchini and scrape out the large seeds before grating. Great for getting rid of excess crop.
