  • Preheat oven to 400°F. Brown beef with chopped onion until meat is no longer pink. Drain well. Beat together eggs, milk and mustard. Stir in biscuit mix, beef, cheddar and Asiago cheeses.
  • Fill greased muffin tins or paper lined muffin tins 3/4 full with batter. Sprinkle parmesan cheese over tops.
  • Bake at 400°F for 15-18 minutes or until a toothpick inserted in center comes out clean. Combine ketchup and garlic powder and use as a dipping sauce.

Notes

* May substitute 2 cups flour, 1/4 cup sugar, 3 teaspoons baking powder, 1 teaspoon salt and 1/4 cup butter for biscuit mix. Combine all ingredients and mix well, or until no visible lumps of butter remain. A pastry blender or a fork works well for this. ** May substitute 2 cups sharp cheddar for the cheddar and Asiago.
