  • Preheat oven to 350 degrees F. In a large bowl; mix all of the ingredients, with a spoon, until well mixed.
  • Spoon Tbsp. size drops of dough onto ungreased cookie sheet, about 2 inches apart. With a fork press dough slightly to flatten into cookie shape. (You may not be able to bake all of the cookies at one time.)
  • Bake for 8-10 minutes (until bottoms and sides are slightly browned). Remove from oven and cool on cookie sheet for 5 minutes, and then transfer to wire cooling rack.


* Best when still slightly warm but delicious any time. * You can frost these cookies with any creamy frosting, sprinkle with colored sugar or other decorations, or put ice cream or Cool Whip between two cookies and serve as cookie sandwiches, but best of all is to put your favorite jelly and a little more peanut butter between two cookies for the ultimate PB&J sandwich or top one cookie with Cool Whip and banana slices for an awesome PB&banana dessert (Elvis would have drooled over this one!). * Leftover dough can be refrigerated for several days or frozen for 2 weeks (thaw completely and stir well before baking leftover dough).

    I was very doubtful when I started these cookies, but they were great. I found that using a fork to flatten them out was causing the fork to stick to the peanut butter, so I ended up using my fingers to pat flatten them out. My husband and son loved them, and the aroma of peanut butter filled the air.

    Amazingly good for having no flour, but as soon as I took a finger of dough, I was assured of their great taste. Did have to bake for 3 extra minutes though.
