* Do not boil the shells completely. They are easier to stuff when they're a little hard and they will cook further in the oven and you don't want them to come out too soggy
* If you can find it, I always like to use fresh mozzarella - it is much softer and melts easier as well.
* You can make a homemade pastry bag with a large Ziploc. Place some cheese mixture in the Ziploc, seal the bag and snip off one corner so you can squeeze the cheese out of the bag into your shell.
