  • Layer 1: Place rice in bottom of 2 qt. casserole, Add 1 of the cans of tomato sauce plus one can of water.
  • Layer 2: Add the corn.
  • Layer 3: Lay the chopped pepper and onions, season with salt and pepper.
  • Layer 4: Pour a can of tomato sauce over the peppers & onions.
  • Layer 5: Roll the meat into a circle that is slightly larger than the size of the casserole (it will shrink with cooking) and place on top
  • Layer 6: Pour the last can of tomato sauce plus one can of water over meat, season with salt & pepper.
  • Layer 7: Lay the bacon strips over all.
  • Bake at 350°F, covered, for anywhere from 60 to 90 minutes, then uncover, and continue baking for anywhere from 60 minutes to 2 hours. Meat and rice should be cooked in center.

Special Equipment Needed


Baking times are approximate, because it depends upon your oven and the thickness of your layers. I've done this recipe on several different ovens over the years, and the best time I ever came up with was 90 minutes covered and 90 minutes uncovered, and that was cheating, using pre-cooked rice.
