  • Brown ground beef in skillet until brown, drain any fat. Add 1/2 a can of enchilada sauce to skillet with ground beef and simmer.
  • Pour the other 1/2 can of enchilada sauce in bowl, dip desired amount of corn tortillas in the sauce, and layer them in a casserole dish with meat mixture on top. Continue layering.
  • Spread shredded cheese on the top and cook at 375 until cheese is completely melted.

Notes

I sometimes put lettuce and tomatoes on top of this dish after it is baked and serve it that way.

    This is what I was looking for. I just added diced onion, diced green chili's, and sliced black olives to the layering. I served this on shredded lettuce and diced tomatoes then topped with sour cream and sliced green onions. It was perfect!
