  • - Hard boil eggs and separate yolks (discard unless you have another use for them)
  • - Crumble tofu and saute in a non-stick pan until golden brown
  • - Chop egg whites, celery, onion and small bunch of cilantro
  • - Combine chopped ingredients, tofu, mayonnaise, salt, pepper and cumin
  • - Scoop into pita halves and enjoy!

Notes

I really like using tofu as a filler in my egg white salad, it's texture works well and it's super healthy. Other veggies like red pepper, scallions and sundried tomatoes can be added too for a bit more flavor!
