  • Chop halibut into bite size pieces. Put into large 16qt pot and cover with water. Bring to a boil for 12-15 min or until all pieces start to float. Strain out the halibut pieces and place in a bowl and set aside.
  • Using reserved liquid, cook your diced potatoes and 1/2 cup of rice for 25 min. At the same time, saute up the bacon for 10-15 min (not crispy yet) and add the chopped onions. Cook until onions start to turn clear/brown (about 18-23 min total, but this should finish before the potatoes & rice).
  • Mix boiled halibut, sauteed bacon & onions to the same pot of potatoes and rice. Add can of evaporated milk, then add more water if needed. Bring back to a slight boil, serve. Salt and pepper to taste.


I prefer mine a little more saltier than most people, but it does taste better once you add salt! I don't use salt or pepper when cooking, I prefer my guests to season it to their tastes!
