  • Melt butter and add sugar mixing well. Beat in eggs 1 at a time. Add flour, salt and almond extract and mix well.
  • Line a 10-inch cast iron skillet with aluminum foil extending up over sides. Coat with no-stick cooking spray. Pour batter into lined skillet. Sprinkle almonds and sugar on top.
  • Bake at 350 degrees for 30 to 40 minutes. Allow to cool, remove from skillet and foil. Slice and serve warm.

Special Equipment Needed


Real butter works best. Real or imitation almond extract does the same. ..1/4 cup of sugar for the topping is to sweet for me, I use a packet of sugar.. For gifts I put a much larger piece of foil dull side up in skillet. After 10 minutes cooling in skillet I lift the cake out and let it cool another 10 minutes. I separate it from the edges, and then use the foil to wrap it up, tie curly ribbon around it and give it away.
