  • Clean off portobello mushrooms with water, wiping off smooth side with moist paper towel. Cut mushrooms into chunks, bite-sized or strips.
  • Combine olive oil, balsamic vinegar and garlic in bowl with lid. Add mushrooms to bowl. Place lid and let marinate. Toss mushrooms in bowl periodically for good coverage. Marinate at least 1/2 hour, longer if you can stand to wait.
  • Place entire mixture in a skillet on medium to high heat. Stirring frequently, bring liquid to a boil. DO NOT COVER! Allow balsamic to reduce completely.

These yummy mushrooms can either be eaten hot, just the way they are, OR, cold, plain, OR, toss cold ones in a salad. Caesar salads work very well. There is enough moisture left that you will not need much other dressing - it really depends on your taste.
