  • Pour oil into a large, heavy frying pan to a depth of about 1/2-inch. Place the frying pan over a medium heat.
  • Cut each corn tortilla into six triangular wedges. When the oil is very hot, fry the tortilla wedges in the hot oil in small batches until they turn golden and are crisp. This will only take a few moments. Remove with a slotted spoon and drain on papel towel.
  • Mix garlic salt, paprika, and chili pepper together. Sprinkle spice mix over freshly drained tortilla chips while they are still hot.

Special Equipment Needed


The oil needs to be very hot for cooking the tortillas chips. You can test it first by adding one of the wedges to the frying pan. It should float and begin to bubble in the oil immediately.
