  • Stir pudding mix into milk in a medium sauce pan over a medium heat. As mix heats, stir in all the other ingredients, except the vanilla wafer. Heat mixture until it comes to a boil and remove from the heat.
  • Place a vanilla wafer in the bottom of a 1/2 cup plastic storage cup, fill with hot pudding mixture. Let containers of "cheesecake" cool before placing the lid on and then store in the refrigerator until chilled.
  • These can be topped with a few fresh berries, such as red raspberries, if you are watching your sugar or - my favorite topping is simply a bag of frozen raspberries and a cup of powdered sugar, blended and strained. Voila! Raspberry sauce.


I reduced the milk called for on the package directions so that my end product would be a little more dense, as cheesecake is prone to be. This recipe is quick and easy to prepare.
