  • Snip large pieces of preserves. Combine preserves, vinegar, and ginger. Reserve 1/3 cup for brushing on pork; set aside remaining for dressing.
  • Cut tenderloin in half lengthwise almost to opposite side. Open and lay flat. Place on grill. Grill 4 minutes. Turn meat over and grill another 4 minutes. Brush meat with some of the 1/3 cup apricot mixture. Grill another 2 to 4 minutes.
  • Meanwhile, wash red leaf lettuce combine greens, apricots, cherries and onions. Divide among four plates. Slice pork 1/2 inch thick. Arrange on greens mixture. Sprinkle pecans and cheese on top. Drizzle with remaining dressing.


This is our favorite summer meal. I served this to 40 adults at a church function. All the plates came back to the kitchen empty.
