  • 1. Cut lemon in half and squeeze juice (about 1 tablespoon) into food processor. Remove large stems from parsley and add to lemon juice with 3 tablespoons olive oil, garlic and Adobo seasoning. Pulse 10-15 times until coarsely chopped and blended.
  • 2. Preheat large sauté pan on medium-high 2-3 minutes. Add remaining 1 tablespoon olive oil to pan; swirl to coat. Add steaks and cook 6-8 minutes, turning often, until internal temperature reaches 145 degrees Fahrenheit.
  • Remove from pan an place on plate.
  • 3. Combine sofrito, water, olives and Saz'on in small saucepan. Add rice; cover and cook on medium heat 6-8 minutes until hot.
  • 4. Remove packaging from plantains and microwave on HIGH 3-3 1/2 minutes until hot.
  • 5. Add rice to plate with steaks. Top steaks with parsley mixture. Top rice with plantains and serve.


Serve the steaks with a crisp green sald, instead of the rice and plantains for a delicious lower carb meal.
