  • Break or cut off the tough ends of the asparagus: compost the ends or feed to the dog, Bonnie. Steam or microwave the asparagus until tender, no more than 4 minutes. Plunge into cold water to stop the cooking. Finely chop the almonds in a food grinder or food processor or by hand. Combine almonds with cheese.
  • Spray a large baking dish with vegetable oil. Place the asparagus in the baking dish and sprinkle almond mixture on top. Top with butter or margarine cubes. Can be made ahead and placed in refrigerator at this time for several hours, but not overnight.
  • Bake in a preheated 400 degree F. oven for 20 minutes or until the almond mixture is a golden brown.
