  • Combine butter and garlic in a small bowl. Spread the garlic butter on one side of each slice of bread.
  • In a small skillet, over medium heat, place buttered bread in pan, buttered side down, top with pepperjack cheese slices, avocado slices, tomato slices and buttered bread, buttered side up.
  • Grill until golden brown, flip the sandwich over with a spatula and grill until golden brown and the cheese is melted.

Notes

A delicious, grown up version of the grilled cheese sandwich. This is a great meatless sandwich. It can also be made as a quesadilla using flour tortillas in place of bread. Additional optional ingredients are sliced black olives and diced green chiles.
