  • Place flour and salt in a large bowl and combine. Add shortening and "cut in" with pastry blender until mixture resembles corn meal (If you do not have a pastry blender, 2 butter knives will do the trick). Add water, 1 tablespoon at a time, until mixture sticks together in a ball and pulls away from the side of the bowl (use a fork).
  • Roll out one-half of dough at a time on a floured surface. Begin with pastry in a ball; flatten with hand, then roll from the center to edges with a floured rolling pin. Mend edges that crack as you go using a tiny amount of water.
  • Combine apples and lemon juice together in a bowl. Stir to coat apples with juice. Combine sugar, cinnamon, and flour in a small bowl. Stir into apples until coated.
  • Place apples in prepared pie crust. Dot with margarine, and place crust on top*. Bake in 425 degrees F oven for 10 minutes, then reduce heat to 350°F and bake 30-40 minutes, or until apples are bubbly and crust is browned.

Special Equipment Needed


* For the top crust, cut dough into 1 inch strips, place them horizontally and vertically over the pie, and weave. (Be sure to trim any dough that is hanging over the sides). Sprinkle some cinnamon on top, and serve with your favorite ice cream.
