  • For the stock:
  • Place everything in a large stockpot and simmer until chicken is cooked through. About 1-2 hours. Skim the top off as needed, keeping everything at a low boil to ensure a clear stock.
  • Remove chicken to a plate and let cool. Strain stock and reserve. Shred or chop cooled chicken into bite sized pieces and reserve. Discard everything else.
  • For the soup:
  • Heat oil in the stockpot and add the onion, carrots, and celery. Cook until slightly softened. (about 7-8 minutes).
  • Add the taco seasoning, cayenne pepper, and stir until combined. Then add the corn, beans, and tomatoes with green chilis and once again stir until combined. Pour the stock slowly back into the stockpot with the vegetables and add the chicken. Simmer about 20-25 minutes and add the cilantro in the last minute of cooking time.
  • Ladle into bowls and top with equal portions of Kraft Free Shredded Non-Fat Cheddar Cheese
  • 1 tsp. each Breakstone's Reduced Fat Or Knudsen Light Sour Cream
  • 1-2 tsp. chopped green onions
  • handful tortilla chips

This is a perfect comfort food recipe. I have made it so many times for my family and friends and it is always well received. Many people are shocked that the main seasoning comes from a taco seasoning packet, however it works great! It is especially nice when all the cheese melts and you spoon it up with tortilla chips. This one is definitely a winner!!!!!
