  • If your filets are plump, they'll take too long to cook. Put them between two layers of plastic wrap, and bash gently with a rolling pin to get them thinner.
  • Slap chicken filets onto a dish. Squeeze lemon over them, and sprinkle them with the olive oil, garlic, herb, and pepper. Leave for 5 minutes.
  • Heat a grill or frying pan until it's smoking hot. Slap the chicken on skin side first. Sizzle for a few minutes until browned. Turn over. Cook the other side for a few minutes. Suspect it's cooked? cut into a filet. It should be white (not pink) all the way through. Squeeze on a bit more lemon juice and add some sea salt. Serve and enjoy!
