  • 1) Pierce eggplant(s) all over with a fork. Leave stem and top in place. Grill, turning occasionally, until insides are soft and skin is loose.
  • 2) Place eggplant(s) in plastic bag for 5 minutes.
  • 3) In a glass or ceramic bowl, scoop out the eggplant with a wooden spoon. Mash with a fork or potato masher. Do not liquify.
  • 4) Crush garlic and add. Alternately add lemon and tahini, one Tbsp. at a time.
  • 5) Mix and chill. Serve with a splash of olive oil and a few sprigs of parsley.


Serve with warmed pita bread, Turkish bread, Zataar, or fresh vegetables - carrots, celery, cucumber spears.
