  • Peel and cut potatoes in medium chunks; place in water and boil for 20-25 minutes until fork tender...but not soft enough to mash.
  • In the meantime, fry bacon in skillet and preheat oven to 350°F. Drain potatoes; place potatoes into medium casserole dish. Melt butter in microwave. Pour the butter over potatoes evenly coating all. Crumble the bacon over potatoes.
  • Bake until potatoes are done, this usually takes 15 minutes. Add cheese to potatoes the last 5 minutes of baking just until melted. Eat and enjoy!
