  • Peel and chop potatoes, boil until fork tender, or for about 30 minutes. Put them into a bowl and put them into the fridge to cool for about 10 to 15 minutes. Boil eggs, for about 20 minutes. After eggs are boiled drop them into a bowl of ice and water (helps to peel them easier). Cook bacon until crisp, on medium high heat for 20 minutes. After cooked transfer onto a small plate with paper towel to soak up excess grease. Set aside.
  • While eggs, potatoes and bacon cook or boil, chop celery and scallions and put into large bowl. After eggs are completely cooled peel them and chop them and put them into the bowl with the scallions and celery. After potatoes are cooled put them in with the other ingredients and toss lightly. Then crumble the bacon over top add the mayonnaise and mustard.
  • Toss until evenly coated and put back into the fridge until ready to serve.
