  • Put chicken in a plastic bag with 1/3 cup Italian salad dressing and 1/2 tsp basil; let marinate for 15 minutes.
  • Preheat oven to 350 degrees F; arrange chicken in a shallow baking dish. Bake chicken for 35 minutes, or until done.
  • While chicken in baking, cut tomatoes into quarters. Put tomatoes, onion, balsamic vinegar, 2 Tbsp. Italian salad dressing and remaining basil into a food processor. Process for about 10 seconds. (If you process for too long, the salsa will be too much liquid.) Serve salsa over chicken; extra salsa goes great with grilled flatbread or pita pieces!

This is a great make-ahead meal: the salsa becomes more flavorful if it sits overnight, and marinating the chicken overnight makes it more flavorful, tender and juicy! And all you have to do the next day is put the chicken in the oven!
