  • Stir oatmeal and water into a bowl. Set aside. In another bowl, mix remaining ingredients except raisins and apples. Stir mixture into oatmeal. Add raisins and apples.
  • Pour into baking dish, large enough for some expansion and coated with non-stick cooking spray. Cover and refrigerate overnight.
  • Next day, bake uncovered for 35 minutes at 350 degrees F. Stir and enjoy!


I altered a few baked oatmeal recipes to come up with a low fat and low sugar version. This is very quick and easy to make. Heat up leftovers in the microwave and serve with milk. The longer you bake it the thicker it will get. It tastes as wonderful as it smells while it's baking.
