  • Prepare stuffing mixture first by browning 1/2 pound ground beef and chopped onion. Drain fat and mix in pine nuts, pepper, and salt.
  • Preheat oven to 350 degrees. Pour bulgur wheat into bowl adding just enough cold water to cover wheat, set bowl in refrigerator for about 15 minutes until wheat doubles in size.
  • Mix meat, onion, salt, cumin, pepper, mint and cinnamon. Remove wheat from refrigerator. Squeeze out excess moisture by pressing between palms and then mix with meat mixture.
  • Divide into 2 equal portions. Smooth first half into a 13 x 9 x 2 pan that has been greased with olive oil. Spread stuffing evenly over first half of meat. Smooth remaining meat over the stuffing. With knife (dipped often in cold water), cut diagonal lines to make diamond wedges, cutting all the way to the bottom and around the edges. Spread olive oil over top and bake in oven for 30 minutes.
