  • MICROWAVE 1 bar of the chocolate, broken in half, in microwavable bowl on HIGH 2 minutes until almost melted. Stir until chocolate is completely melted; set aside. Mix flour, baking powder and salt in medium bowl; set aside. Chop remaining bar chocolate.
  • BEAT butter and sugar in large bowl with electric mixer on medium speed until light and fluffy. Add egg and vanilla; beat well. Stir in melted chocolate. Gradually beat in flour mixture. Stir in chopped chocolate, coconut and pecans. Drop by heaping tablespoonfuls onto ungreased cookie sheets.
  • BAKE at 375°F for 10 minutes or until cookies are puffed and feel set to the touch. Cool on cookie sheets 1 minute. Remove to wire racks and cool completely.

Rated 4 out of 5 by from These are really good! These are really good! I made them for a bake sale, and couldn't stop eating them myself. My grocery store didn't have the caramel chips, so I bought regular caramels. On the first batch I tried cutting the caramels to bit size, but they were hard to cut and left bits that were hard to chew. The second batch I melted the caramels in with the chocolate and butter. I liked them much better that way.
