This chicken recipe comes from my South Beach Diet book and my husband (who is a very picky eater loves it). It is quick and delicious!
Cooking in a pan instead of the oven gives the chicken a more intense flavor from the olive oil and balsamic vinegar. I have not used balsamic vinegar much in the past, but after trying this recipe, I have used it quite a bit and my husband and I have really grown to like it a lot!
You don't have to be on a diet to love this recipe!
I used seasoning salt & added 3 chopped green onions, and let it marinate for about 1/2 hour. Then I seared chicken in a hot skillet before baking, to get a nice brown color. Smelled great while cooking, tasted just as good as it smelled!

Fast and easy, made with ingredients already in the kitchen cupboard. Passed my 6 yr. olds "yummy" test and is sophisticated enough for adults. Will make it again!
