  • The original recipe says to bake the breasts in the oven, but I coated them with the ingredients above and put all of the ingredients that were leftover after coating the chicken into a non-stick pan with the chicken breasts and simply cooked it until a fork inserted into the thickest part of the breast shows that the breast is tender and juicy - I cooked my chicken about 10 minutes (covered).
  • If the breast does not feel tender yet, cook for another 2 or 3 minutes (keep an eye on it and do not over-cook).

This chicken recipe comes from my South Beach Diet book and my husband (who is a very picky eater loves it). It is quick and delicious! Cooking in a pan instead of the oven gives the chicken a more intense flavor from the olive oil and balsamic vinegar. I have not used balsamic vinegar much in the past, but after trying this recipe, I have used it quite a bit and my husband and I have really grown to like it a lot! You don't have to be on a diet to love this recipe! Enjoy! Katheryn6

I used seasoning salt & added 3 chopped green onions, and let it marinate for about 1/2 hour. Then I seared chicken in a hot skillet before baking, to get a nice brown color. Smelled great while cooking, tasted just as good as it smelled!

Fast and easy, made with ingredients already in the kitchen cupboard. Passed my 6 yr. olds "yummy" test and is sophisticated enough for adults. Will make it again!
