  • Cut chicken breast into 1x1 cubes and saute in olive oil until cooked thoroughly. Drain if necessary and chill.
  • Cook pasta until still slightly firm. Rinse with very cold water, drain and chill.
  • Toss well chilled pasta and additional ingredients EXCEPT dressing and chicken. Add chilled/cooled chicken and THEN the balsamic dressing (usually 3/4 to all of the bottle). Incorporate well without crushing the pasta.
  • Refrigerate until chilled throughout. Serve.

Notes

Time savers: chill separate ingredients prior to preparation; place cooked chicken and pasta in freezer for 5 min or so; chill in thin flat dish after prepared. You can also increase the chicken by one breast and serve as a light entree in the summertime.
