  • Preheat oven to 350°F. Grease a 9x5x3 inch loaf pan. Mash bananas in a large bowl. Add sugar, eggs, butter, oil, and vanilla. Add dry ingredients to banana mixture. Fold chopped dried apricots and nuts into batter.
  • Spread batter evenly into prepared pan.
  • Bake 1 hour or until cake tested comes out clean. Cool 15 minutes in pan, then remove to cool on rack. Sprinkle with powdered sugar before serving.

Notes

Chop apricots with small kitchen scissors. Purchase sugar glazed pecans.
