  • Combine flour, baking soda and salt in medium bowl; set aside. Beat together margarine, 1 cup granulated sugar and brown sugar in large bowl until creamy. Beat in banana and egg until blended, Stir in flour mixture until combined. Cover and chill 2 hours or until dough is firm enough to handle.
  • Combine remaining 1/4 cup of granulated sugar and cinnamon in small bowl. Shape dough into 1-inch balls. Roll in cinnamon mixture; place two inches apart on ungreased backing sheets.
  • Bake at 350°F 10 to 12 minutes or until lightly browned. Carefully remove cookies to wire rack to cool completely.

Prep Time: 15 minutes Bake Time: 12 minutes Chocolate Banana Stars: Prepare, shape and bake dough as directed except roll dough in 1 cup finely chopped almonds instead of cinnamon mixture. Immediately after baking, press unwrapped individual milk chocolate star candies into center of each cookie. Cool as directed. Banana Chippers: Prepare and shape dough as directed except stir in 1 package (10 ounces) peanut butter chips and 1 cup chopped pecans or walnuts into dough and omit cinnamon mixture. Bake and cool as directed.
