  • Preheat oven to 350 degrees. Grease and flour a 5 x 9 inch loaf pan.
  • Combine raisins, brandy and almond extract in a small saucepan and bring to simmer over medium-low heat for just a few minutes. Remove from the heat and set aside to cool for 15 minutes.
  • In a mixing bowl, blend bananas, sugar, oil and eggs with an electric mixer for just a minute or so. Sift together remaining dry ingredients into the batter mix and mix together with a large wooden spoon until blended. Lastly, add the brandied raisins and gently blend into the mix.
  • Pour the mix into the loaf pan, and bake for one hour, or until a toothpick inserted into the loaf, comes out clean. Allow the loaf to cool in the pan for 15 minutes; then, turn out the loaf to cool completely on a wire rack. Wrap in plastic wrap to ensure freshness.


Makes a moist loaf, great for an afternoon tea or dessert.
