  • In 12 qt stock pot saute onions in oil until translucent, then add rub and stir until well blended. Add chicken and pork and saute 5-7 min on medium heat.
  • Add water to cover (approx. 1/2 gallon), then add tomatoes. Bring to boil and add carrots.
  • Cook until tomatoes start to break up, then add potatoes. Cook until potatoes have broken down, and then add BBQ sauce. Serve over hot rice.

Special Equipment Needed


This is a recipe I have used for several years and got from the internet. It is not my own but is quite the perfect for those low-country hash lovers. The length of cooking time may vary depending on how long it takes for all to cook down. The hash should have the consistency of thin pudding. The spiciness of it depends on your rub and its ingredients. I recommend a traditional BBQ rub.
