  • Slice chicken tenders into 1/2-inch pieces (easier if they are partially frozen) and set aside.
  • In a large skillet, saute chopped onion and peppers in 1 Tbsp. of oil until soft and set aside. Add the other Tbsp. of oil and brown chicken tenders in the same skillet over med. high heat. Add vegetables back to the skillet and stir. Add the ketchup and barbecue sauce and stir. Reduce heat to a low simmer until chicken is cooked through (5 minutes).
  • Place cheese slices over chicken mixture in skillet and cover with a lid until melted (1 minute). Remove lid and cool for 1 minute.
  • Split rolls partially through and remove some of the soft bread from inside. Spoon chicken mixture into rolls and serve.


We come from Philadelphia, home of the famous "Philly cheese steaks". This is a tasty substitution and suitable for those restricting consumption of red meat. Great for weekends watching the football game. This can also become a healthful meal spooned over brown rice and served with a salad as a main dish.
