  • Chop tomatoes, jalapenos and onion. Melt 2 Tbsp. of margarine in a frying pan and add onion, and jalapenos. Cook until soft.
  • Add tomatoes and cook until soft, approximately 10 minutes. Add more margarine if needed. Remove from pan and set aside.
  • Melt 2 Tbsp. of margarine, add rice, and cook until brown. Stir in beer, tomato sauce, and the sautéed vegetables. Cover and cook until beer is absorbed.
  • Add water and cumin, bring to a boil and then cover and simmer until rice is tender, approximately 25 minutes. Keep The lid on tightly.. try not to stir too often, it will cause the rice to stick.
