  • 1. Cut okra into 2 inch chunks and place in medium sauce pan. Cover with water. Bring to a boil. Reduce heat, cover, and simmer for 5 minutes; drain well.
  • 2. Sprinkle okra with salt and pepper. Dip in egg. Roll in bread crumbs.
  • 3. Deep fry in hot oil until golden brown. Drain well on paper towels.

Rated 4 out of 5 by from I've made this twice already. I've made this twice already. I love this side dish. It is SO easy to prepare and I can whip it together in about 5 minutes. I don't even thaw the corn. I throw it in the microwave as directed, but just add about 2 tbsp water to it, and it turns out perfectly. I also just use plain cream cheese (since that's what I had on hand) and it tastes just fine to me...just needed salt and pepper. I also added some real bacon bits, which gave it a nice texture and flavor. Finally, I mixed the leftovers with some cooked rice and loved the combo of the two!
