  • Mix rice, pork and beans, salsa and 3/4 cup cheese together in a microwave safe dish.
  • Microwave until heated through (time depends on your microwave). I would heat it for about 2 minutes.
  • Sprinkle 1/4 cup of cheese on top - microwave another minute to melt the cheese.

Special Equipment Needed


Allow 5 extra minutes to make rice if you don't have any leftover from another meal. Great on its own, or serve it with other condiments such as sour cream, green onions, fresh chopped tomatoes, or Fritos. Also great served with tortilla chips, or wrapped in a tortilla, in which case it would make about 6 to 8 servings.
