Beef Short Ribs with Mushrooms

  • Preheat oven to 325. Combine flour, salt, pepper and dredge ribs. Heat olive oil in Dutch oven over med. heat, then sear beef on all sides until golden brown, 3 to 4 min. on each side. Remove beef, set aside. Add onion and garlic, cook until brown and fragrant, about 2 min. more. Add stock, scraping and bits stuck to pan. Return beef to pot. Bring to boil.
  • Cover pot and transfer to oven. Cook until beef is fork tender, 2 1/2 to 3 hours. In the last 15 min. of cooking, heat the remaining oil in a heavy skillet over med. heat. Add mushrooms and cook until golden, 6 to 8 min. Toss with parsley and season with salt and pepper.
  • Remove ribs to serving dishes, place pot over high heat, reduce cooking liquid until slightly thickened. Serve mushrooms and cooking liquid.
