Use as a luncheon sandwich served with a cup of soup or salad. For this sandwich, spread choice of bread with generous helping of Benedictine, add a few very thin slices of cucumber and a leaf of lettuce.
Mixture keeps well in refrigerator for several days.
This is my variation of the original Benedictine Spread created in Louisville, Kentucky by Jenny Benedict who operated a tea room from 1900 until her death in 1928.
