  • Add cream cheese cut in several pieces to your electric mixing bowl. Let soften for about 15 minutes. Cut up peeled cucumber and onion in pieces; add to a blender and puree.
  • After cream cheese is softened, start mixer on low to medium speed; slowly add cucumber, onion puree until well blended.
  • Add one or two drops of green food coloring to mixture for light green color.


Use as a cold dip with pretzels, chips or crackers. Use for finger sandwiches. Use as a luncheon sandwich served with a cup of soup or salad. For this sandwich, spread choice of bread with generous helping of Benedictine, add a few very thin slices of cucumber and a leaf of lettuce. Mixture keeps well in refrigerator for several days. This is my variation of the original Benedictine Spread created in Louisville, Kentucky by Jenny Benedict who operated a tea room from 1900 until her death in 1928.
