  • Mix sugar and milk add coconut. Place over med heat on top of stove. Stir constantly bring to a boil. Boil for seven minutes (keep boiling yet adjust heat to keep icing from popping on you and burning your hands).
  • Remove from heat and add extract stir well. Let sit for a short while until icing will stay on cake, maybe about twenty minutes.
  • Ice cake as you would an ordinary cake -- icing must be warm or it will not go on cake.

Special Equipment Needed


This icing is very rich yet it is also very good. The warm icing just makes the cake layers so moist. May use vanilla extract in place of lemon. My family likes the slightly lemony flavor, so that is what I use. Keep cake covered after icing is cool. Be sure cake layers are cool before putting on the warm icing.
